氣味(khì-bī)看似無形,卻能觸及長久且深層的記憶。
對於某個區域、對於某個人、對於某段時光,我時常以「氣味」作為記憶點,比如:聊起我從小成長的台北,是那有如悶在鍋中的潮濕黏膩;談到我那手藝極好的母親,總讓我想起小時牽著她的手,穿梭在傳統市場中的人群來往與各種食材氣息。

六年剛搬到嘉義時,曾聽長輩說:「以前一出火車站會聞到兩種味道:酒香和木頭香。」也曾經舊酒廠員工說:「以前有些員工下班臉紅紅,倒不是因為喝酒啦,而是因為在製酒過程不斷聞酒香。」

雖然現在已聞不到濃烈的酒香與木頭香,仍可透過現存老建築、或加入創意改造的運用,遙想過往產業榮景。

在嘉義生活的這幾年,我也時常在尋找所謂的「氣味」:「每個嘉義人都有不同排行榜」的「雞肉飯」、混合多種新鮮水果的「三味/四味果汁」、嘉義專屬的獨特佐料「白醋」、我過往沒吃過的「加地瓜的豬血糕/加皇帝豆的糯米腸」、到了東石布袋就想到「蚵仔」、一年四季上阿里山則可呼吸到不同的山林氣息、穿梭廟宇間則被香煙裊裊所包圍、而溫暖和煦的陽光更是我對嘉義的深刻印象。
