異鄉人大概是搬到嘉義後才認識所謂的「涼菜」吧?以往成長過程外食想吃蔬菜時,通常只吃到「燙青菜」或「醃漬涼拌」吧,你們一定沒有辦法想像,我八年前第一次在嘉義吃到涼菜有多驚艷。

這幾年在嘉義吃到的「涼菜」,幾乎每家都食材新鮮、處理很乾淨(是的,我很喜歡用「乾淨」二字來形容涼菜)。多數店家皆可配上白醋(是的,不能說美乃滋)或醬油,而我通常喜歡不沾醬吃,對我來說,是補充纖維又退火的最佳聖品呀!

照片中有民權路三禾火雞肉飯(和闆娘一樣美的涼菜,外帶也很美)、林聰明沙鍋魚頭(涼菜很對味擺盤也很美)、諸羅山涼麵(我太晚到了,不然蔬菜選擇更多)等等~而你呢?對你來說「嘉義涼菜」具有什麼特別的成長或日常生活回憶嗎?
